Candied Pecan, Cranberry & Apple Salad with Sweet Vinaigrette.


















There's one restaurant that I particularly go to for their walnut apple salad. I love it because (besides it being filling, for a salad) the dressing is perfectly sweet; but at $8...I had to figure out how to make it at home.






















Serves 2 (Huge salads! LOL)

Salad
1 (5oz.) container of mixed greens (washed)
2/3 cup candied pecans
2/3 cup dried cranberries
3 tablespoons crumbled feta cheese
1 granny smith apple (cored & sliced)

Sweet Vinaigrette (adapted from food.com by fordido)
1/4 cup (half balsamic vinegar & half red wine vinegar)
1 garlic clove (smashed)
1 tablespoon sugar
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1/4 cup extra virgin olive oil


• Toss all salad ingredients in a large bowl
• Mix all vinaigrette ingredients in salad dressing container
• Serve a bit of vinaigrette over salad
Devour! 


This made for a very, very nice replica:)
