Major Mac.


Creamy texture, slightly loose consistency, and just pleasantly cheesy without the use of an enormous amount of cheese. Unlike this mac, this macaroni & cheese takes a tad more time, but tastes more classic.

Here is the Recipe: (adapted from Recipezaar, by Bev)
2 tablespoons butter
1/4 cup flour
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon black pepper
1/8 teaspoon red pepper
2 1/2 cups milk
2 cups shredded cheddar cheese
2 1/4 cups dry elbow macaroni

Cook macaroni according to package
Butter a casserole dish
Preheat oven to 375 degrees
Melt butter in a large pan
Stir in salt, mustard, black and red pepper until smooth
Remove from heat
Gradually stir in the milk until smooth
Cook over medium heat until it thickens (stirring constantly, about 10 minutes)

When your arm gets tired, get someone near to take over the stirring
Remove sauce from heat

Stir in 1 1/2 cups of the cheese until it melts

Add cooked macaroni to the cheese sauce


Pour into buttered dish

Top with remaining 1/4 cup of cheese
(I ran out of cheddar, and had to improvise with a taco blend)
Bake for 20-25 minutes
